Description
The Chardonnay grapes for the MCC were hand-picked and sorted in the early morning at Cavalli. After whole bunch pressing only 50% of the juice from the grapes, the juice was fermented in stainless steel to produce a crisp, fresh fruit profile. After five months lees contact, the wine was re-inoculated for secondary fermentation and bottled under crown cap.
A vibrant, crisp expression of Stellenbosch Blanc de Blanc MCC: fresh green apple, white pear and quince dominate the fruit profile, while flavours of biscuit and brioche bring complexity to the palate.
Best served well chilled.
Pair with Ceviche -the bright flavours of citrus and seafood work wonderfully with the bubbles and acidity.
