The Sauvignon Blanc was fermented wild in stainless steel tanks and left on its lees for seven months before bottling
A pure expression of the variety leading with blackcurrant leaf and lime-driven citrus on the nose. The palate is fresh and stony with a range of unripe tropical fruit – pineapple and guava in particular – adding complexity, while the finish is nicely textured with a savoury edge. Balanced and bracingly fresh.
