Selected grapes from premium vineyards in the Coastal Region. Sandy-loam topsoil with well structured subsoil on weathered rock, these are nutritious soils with superb water retention capacity. Fermentation on the skins in stainless steel fermenters, pump overs 3 times per day. After pressing 30% of the blend is matured for 6 months in third fill French barrels, where malolactic is also completed
