Description
Predominately Sauvignon Blanc, but differently treated to sibling. After wild ferment, 2022 spent 10 months on lees in 1st-fill 300L barrels, has more cedar notes in the diced pear flavours. There’s similar tension, the high-toned acidity giving life, incredible length and cellaring potential.
Aromas of grapefruit, spiced quince, and elderflower, with a distinctive flintiness add to the fresh and vibrant nose. This wine is structured and balanced by a good acidic line running through the palate, built on layers of fruit and floral notes, adding to the texture and complexity.
Serve at 7-9 Deg.
Pairs well with rich and creamy poultry, fish dishes, cream-based pastas and even some spicy Asian cuisines.
